Cooking fruit tarts

When cooking fruit tarts, to make sure the fruit doesn't make the pastry soggy, all you need to do is cook the pastry a quarter of an hour before in a preheated over (thermostat 6).
You can also sprinkle some almond powder on the pastry before adding the fruit. To add extra flavour, you can spread some fruit marmelade on top.
